Ensaladang Kamatis (Tomato Salad)

If John is to Marsha, Bonnie is to Clyde or Romeo is to Juliet, these are perfect partners as we know them.  In eating perfect pairing is also primordial. A true partnership is one that takes the  building blocks and construct something  greater by far than those parts alone. Food partnerships can be hit and miss, but once you have the perfect pairing no matter how simple the dish is, it could be like eating in a five star hotel :-)

In the Philippines fried fishes is often served with vegetables like buro (pickled vegetable), ensalada (salads) or sautéed.  And with the rainy season ravaging the country nothing beats a good summery food to bring us our smile and confidence back.  Here’s a very simple tomato salad recipe to enjoy with your friend fish or fried meat dishes;  Kain na!

Recipe:  Ensaladang Kamatis

 

Ingredients

  • 5 big plumpy tomatoes
  • 1 red onion
  • 1 cucumber (pipino)
  • a sprig of fresh coriander
  • 2 tablespoons of vinegar (sinamak/cane vinegar/ etc)
  • 1 tablespoon of sugar
  • half teaspoon of salt
  • 3 tablespoons of oil (olive oil/grapeseed oil/vegetable oil)
  • freshly crushed pepper
  • siling labuyo (red chili) optional
  • Prep time: 10 minutes
  • Servings: 4 servings
  • Difficulty: easy

Directions

Wash the tomatoes, onion and cucumber. Cut in medium sized cubes the tomatoes. Peel the cucumber and cut in medium sized cubes. Peel the onion and chop. In a bowl put the vinegar, salt and sugar. Dissolve well the salt and sugar. Add the oil and mix well. If you want a spicy salad add at this point your chili that is chopped or some cayenne powder. Toss the chopped tomatoes, cucumber and onions. Top it with chopped fresh coriander. Chill and serve with your fried or grilled meat and fish.
