<p><strong>Stuffed Tomatoes (Rellenong Kamatis)</strong></p>
<p><strong>Ingredients:</strong></p>
<p>about 5 to 7 big ripe tomatoes</p>
<p>1 red onion , minced</p>
<p>one fourth kilo of ground beef</p>
<p>half a cup of cooked rice</p>

<p><strong>Procedure:</strong></p>
<p>Cut the upper part of your tomato, delicately empty them using a spoon set them aside for filling.  In a bowl mixed the rice, ground beef, onion, egg yolk, and the rest of the tomato you collected.  Mix them well, add salt and pepper.  Scoop them and fill your emptied tomatoes, topped them with cheese and bake in the oven at 180° celsius for about 25 minutes.  This is a complete dish!</p>

<p><strong>Fried Rice Recipe (Sinangag sa Bawang)</strong></p>
<p>about 2 cups of left-over rice</p>
<p>* It is always better to use the left over rice.  Not only they are economic but it is easier to cook them than freshly cooked rice. If you are using freshly cooked rice let it stand for a while until its not hot anymore or else it will stick to your pan</p>
<p>some gloves of garlic pounded (you can use more or less depending on your taste)</p>
<p>some cooking oil</p>
<p>salt, pepper, a bit of soy sauce</p>
<p>you can add some chopped ham, grean peas  or any vegetables sitting on your fridge (but they are optional)</p>
<p><strong>Procedure:</strong></p>
<p>You will start by mashing the rice grain by grain using a fork or your hand (its your choice).  My dad normally wets up his hand to facilitate this task.  Warm up your pan then put your rice that&#8217;s been separated grain by grain. The idea is that it is no longer a big mass of cooked rice.  Over medium heat continue stirring the rice so it won&#8217;t stick or be burnt.  When the rice is hot enough, make a small hole in the middle put your pounded garlic and your cooking oil. Brown a little bit the garlic and fold the rice.  Add some salt, pepper, soy sauce to taste.  Presto it&#8217;s done.  You can add up also some chopped omellete, ham and some vegetables.</p>

 Buro or balao balao is a Filipino  native delicacy made from fermented rice and shrimps, ingenous from the province of Pampanga. It is eaten as an accompaniment but taste even better when served some eggplant, lettuce, mustard, and other vegetables.

<p><strong>Procedure</strong></p>
<p>Start by preparing the rice (C4 variety). The rice must be slightly wet when cooked.<br />
Use 4 cups of water to make the rice slightly watery. Set aside cooked rice to cool.<br />
Mix salt and shrimp in mixing bowl. Mash thoroughly until the shrimp absorbs the salt. Let stand for 2 hours. After 2 hours, put cooked rice in a mixing bowl. Add salt/shrimp mixture then mash to mix ingredients thoroughly. Add the remaining salt to the mixture and mix. Set aside.<br />
Transfer the mixture into sterilized bottles. Leave a centimeter head space from the mouth.<br />
Cover bottles with polyethylene plastic. Cap tightly. Set aside for 10 days to ferment.<br />
On the 10th day, the balao-balao is ready to be served. To cook, saute with garlic and onion.</p>
<p>The balao-balao will last for 2 months when kept in a freezer.</p>

<p>* You can also make a Vegetarian Fried rice (using only vegetables)</p>
<p>* You can also make some Sausage Fried rice (using different kinds of sausages)</p>
