Who has not tasted siopao yet is definitely missing a lot!

Siopao is a popular filipino snack of steamed bun with meat filling. Some like it with Pork Asado while others prefer Bola Bola. Interestingly, we could know the flavor inside a siopao by the color indications on top of the buns. Isn’t that great! If you have some left-over meat (like adobo or even roasted chicked could do the thing), this recipe is a great way to make use of them.

Ingredients:

2 1/2 cup flour

4 tsp baking powder

1/4 cup sugar

2/3 cup warm milk

Bola-bola filling

1 onion chopped

2 cloves of garlic minced

1 tablespoon of ginger juice

2 tablespoons of soy sauce

2 tablespoons of sesame oil

250 g of ground pork

salt

pepper

2 hard boiled eggs sliced(if you have salted eggs to use that’s better)

Procedure:

Sift flour and baking powder together in a large bowl. Add sugar in the flour. Pour warm milk in the flour gradually. Knead the dough until it becomes as soft. Divide the dough into 8 balls. Set aside. In amixing bowl put the ground pork, onion, ginger juice, soy sauce and sesame oil. Mix well. Put some salt and pepper to taste. Your dough balls will double in size, punch them down. Knead them one by one on your floured table. Flatten your dough, on the center put a sliced cooked egg and a scoop of your meatball filling. Gather sides toward the center, twist and be sure to seal it correctly. Place the pinched side down on a parchement paper. Cook in a steamer and steam for about 20 to 25 minutes depending on the size.

1 1/2 kilo of spaghetti noodles

2 liters of water

some salt and cooking oil

1 bottle of tomato catsup

2 cans of tomato sauce

1 tablespoon of tomato paste

3 cloves of garlic chopped

2 onions chopped

some cooking oil

2 bay leaves

1 tablespoon of sugar

salt and pepper

cooking oil

some grated cheese

Procedure:

Start by preparing your meatballs. In a salad bowl put your ground pork and ground beef. Add the chopped onion and carrots. Mix well. Put some salt and pepper. Break the egg inside and fold in the flour. Continue mixing well. With your palm shape ball form like to make your meatballs. Put them in a plate with enough spacing. It is up to you if you prefer to make big balls or medium sized balls. Put them in the fridge to let them hold together. After about an hour, in a frying pan put some oil and fry your meatballs. Do not overcook them for you will cook them again with the tomato sauce. Just give them a ligh golden brown color on all sides. On the same pan add a little bit of oil and start sautéing your garlic and onions. Put your tomato paste and bay leaves. Pour the catsup, tomato sauce and water. Mix them well. Cover and let it simmer slowly for about twenty minutes. Add your meatballs and put some salt, pepper and sugar. Cover and let it simmer for another five minutes. In a big casserole put two liters of water with rock salt on it and 2 tablespoons of cooking oil. As soon as it boils add the spaghetti noodles. Cook them as per instruction. A spaghetti noodles would normally require about ten to eleven minutes of cooking for aldente and more for a much softer noodle texture. Strain them. Pour your sauce on the top and some grated cheese on it.

Ingredients:

5 big eggplants (you need to count 1 eggplant per person)

*when choosing eggplants choose the one with smooth and bright skin, take note that sometimes there are traces of worm holes on the surface

half a kilo of ground pork

4 cloves of garlic crushed

1 onion minced

1 tomato chopped

6 to 7 eggs depending on the size

cooking oil

salt & pepper

Procedure:

Start by grilling your eggplant. You can grill it over charcoal or your oven. Try to cook the eggplant about fifteen minutes each side if you are grilling them and about thirty to forty minutes if you will grill them in the oven. Once the skin of eggplant has turned into carbonized black and the eggplant odor comes out its ready. Put them in a basin with cold water to facilitate your task of taking of their skin. If they are well cook, taking off their skin is easy. Pat off dry with paper towel each eggplant to be sure they are dry. With the help of a fork flatten each eggplant to allow you to put your stuffing inside. This is also the time to verify if your eggplant is free from any worms. In a separate bowl mix the rest of ingredients: ground pork, garlic, onion and tomato. This will be your stuffing. Beat the eggs as you would beat eggs in making omellette and let it stand ready. In a plate put your flattened eggplant, put on the top your meat stuffing, put salt and pepper and pour over some beaten egg. Heat a pan and put your cooking oil. Slide down the prepared eggplant on the frying pan and fry each side. They are cook one they turn golden brown on each side, about five to ten minutes. You can reheat some left over cooked eggplant omellette, just be sure they are properly kept. You can keep them for maximum of two days.
